Tomorrow, I'll make green soup with ginger, from Love Soup, and maybe some minestrone* too with those teeny-tiny zucchini, and the turnips, and for Thursday, I am planning on feeding friends a romaine salad with beets, walnuts and goat cheese. The cilantro is destined for a cilanto-pepita pesto which we will put inside and over some cheese flautas. So good, and since they are pan-fried, even Thomas will eat them. I'm not sure what to do with the garlic scapes.
*Ah crap, I just realized I might not be able to make minestrone until later this summer, when we get tomatoes from the farms. Until they are in season, I usually use a can of tomatoes in my minestrone, but I recently read about the amounts of bisphenol-A present in canned tomatoes, and I won't eat them or feed them to my loved ones anymore. I don't have a source for tomatoes in glass jars, and I ran out of the ones I canned last summer sometime in January. Yep, I am one of THOSE people. Years ago someone asked me if I heated my lunches in their plastic containers. "No way!" I said, horrified at the thought. "Yeah, I thought so," was the response, with the "you're one of THEM." left implied.

I guess I feel okay about the rarity of our exposure to plastic risks. I use canned tomatoes 4-5x a year. I've tried to reduce my use of canned food in general for reasons of taste, sodium, and nutrition. I heat food in plastic containers 1-2x a week, and that's mostly for me, not the babes. Nichol had milk warmed in a plastic bottle once every couple of months, etc. Everything in moderation, watchful moderation.
I wonder if there are any chunky-style pasta sauces in glass jars that would work for you. Might make the broth too tomatoey, though.

Hmm, maybe Annie's pasta sauce in a jar would be the tomato I need in my minestrone.
